Tapas comes from the Spanish verb tapar, which means "to cover". The tapas tradition began, according to a legend, when king Alfonso X of Castile or Alfonso the Wise, recovered from an illness by drinking wine mixed with small dishes between meals. When he recovered, the king started to order the taverns to serve with a small snack or tapa with every beverage. This loophole in the law allowed drinkers to consume alcohol. The original tapas were slices of bread or meat, accompanied usually with sherry to cover their glasses between sips.
Taverns realised early that their alcohol sales was increasing, much thanks to tapas, because of its sales in food, that made the customers thirsty. Ingredients such as Ham or chorizo were very salty and became eventually very important and tapas grew in popularity. Soon tapas and alcohol was the most popular way to enjoy an evening in Spain.
