The Experience
When you arrive at your chosen venue in Ireland, whether that is a city centre wine bar or a countryside vineyard, you check in with staff and get led through to your reserved table. Your host greets you both and settles you into the space before your dedicated sommelier introduces themselves, explaining how the tasting session is organised and what particular styles of wine you will be sampling during your visit.
Your host starts by bringing out the first bottle of the flight, explaining where the grapes were cultivated and how the local soil and climate shape the overall profile of the wine. As each glass is poured, you are guided through how to check the colour, catch the subtle aromas and assess the texture on your palate as you drink. You can take your time sipping every pour, because the experience moves at a relaxed pace that leaves plenty of opportunity for conversation between drinks.
As the session continues, the sommelier presents a selection of wines sourced from top growing regions around the world. You compare light crisp whites against fuller-bodied reds while learning how tannins, acidity and serving temperature alter the drink in your glass. Throughout the tasting, your sommelier answers any questions you have while sharing simple tips on food pairings and how to choose better bottles on your next shop or dinner out.
You finish the final pour of the flight, taking in the last flavours as the sommelier leaves you to relax at your table.
